Verifique, antes, se sua forma de pudim cabe lá dentro. Coloque o açúcar numa panela, junte 1 xícara de café de água, mexa bem para dissolver o melhor possível o açúcar e leve ao fogo. Não mexa mais com a colher.&lt;br /&gt;&lt;br /&gt;2 - Quando a calda estiver de um dourado escuro, tire do fogo e, com o auxílio de uma colher, caramelize uma forma de pudim, isto é, espalhe a calda em toda a forma, sem esquecer o cone central. Reserve.&lt;br /&gt;&lt;br /&gt;3 - Coloque no liquidificador os ovos e o açúcar e bata por 5 minutos, até que esteja bem fofo e claro. Junte a farinha de trigo, colher por colher, sempre batendo e, por fim, o leite fervendo, aos poucos. Continue batendo por mais uns dois minutos.&lt;br /&gt;&lt;br /&gt;4 - Despeje a massa obtida, quase líquida, na forma caramelizada. Leve ao forno, colocando dentro da forma que estará com água fervendo. Deixe por cerca de 50 minutos a uma hora, até que esteja bem dourado.&lt;br /&gt;&lt;br /&gt;5 - Retire ainda quente, para que a calda não se solidifique. Se deixar esfriar, vai perder a calda e o pudim ficará seco, além de mais difícil de tirar. Quando a massa estiver homogênea, desligue a batedeira e acrescente a essência de baunilha. Misture e reserve.&lt;br /&gt;2- Em outra vasilha peneire a farinha de trigo com o chocolate em pó, o sal e o fermento.&lt;br /&gt;3 - Agora junte o creme da batedeira com os ingredientes peneirados, aos poucos. Misture bem até a massa ficar lisa e homogênea.&lt;br /&gt;4 - Por último entra o chocolate picado. Mexa tudo e, com a ajuda de uma colher, arrume a massa em uma fôrma untada e enfarinhada. Junte a farinha aos poucos, amassando sempre, até obter uma massa que não se grude nas mãos. Se necessário, junte mais farinha. Com a massa, faça rolinhos com 2 cm de diâmetro e, com uma faca, corte-os em pedaços de 2 cm.&lt;br /&gt;&lt;br /&gt;Para fazer os vincos, pressione o nhoque contra o garfo e faça-o rolar até a ponta. Repita o procedimento com cada uma das bolinhas. Coloque em uma assadeira polvilhada com farinha. Numa panela grande, ferva 4 litros de água com uma colher (sopa) de sal. Junte o nhoque aos poucos e cozinhe até subirem à superfície. Retire com uma escumadeira e vá colocando em uma travessa. Deixe essa massa descansar em um lugar morno, pode ser dentro do forno ou em cima da geladeira. Cubra com um pano e aguarde dobrar de volume (30 a 50min).&lt;br /&gt;4. Após este período, é hora de acrescentar algum recheio, se quiser. Você pode jogar bacon torrado, linguiça torrada e picada, tomates secos, azeitonas, alho frito, queijo em pedacinhos, etc. Apenas mexa para misturar o recheio picado.&lt;br /&gt;5. Coloque a massa pronta em uma forma para pães, untada e enfarinhada. Se você não tem forma para pão, use a forma de pudim ou de bolo, também serve.&lt;br /&gt;6. Leve para assar em forno médio por 30 a 40 min. O pão deve ficar levemente dourado em cima. Para ter certeza que está assado, dê umas batidinhas com os dedos em cima do pão. Se o som for “oco”, já está ótimo. Depois retorne à grelha com a gordura voltada para cima e termine de assá-la durante mais 5 minutinhos até que fique “ao ponto”.
